Breakfast is a pretty big deal.  It’s the most important meal of the day!  And we love the breakfasty foods.  The large spreads with fresh fruit, whipped cream, pastries, yogurts, bacon, sausages… oh yeah.  All that great stuff.

But as much as we love the stuff, nobody seems quite too keen on waiting around for it.  So froot loops it is.

Breakfast For Lunch and Supper

However, since we do all love those foods, we do often have breakfast for lunch and or supper.  And everyone is happy, and I call that a win.  We made our Rudolph Pancakes for supper a few times leading up to Christmas, and we go out of our way to find the breakfast all day restaurants when we travel.

Homemade Waffles
A really easy homemade waffle that is light and fluffy

Ingredients
  1. 2 eggs, separated
  2. 2 cups milk
  3. 2 cups flour
  4. 1 tbsp baking powder
  5. 1/2 tsp salt
  6. 1/3 cup oil
Instructions
  1. Separate the eggs. Put the yolks in a mixing bowl, and put the whites in a separate bowl. Use a hand blender to beat the egg whites until they form peaks.
  2. Add the milk, flour, baking powder, salt and oil to the egg yolks and mix well.
  3. Fold in the beaten egg whites
  4. Use 1/3 cup of batter at a time per waffle in your waffle iron, and follow the directions on your waffle iron accordingly
Notes
  1. Keep your waffles warm by heating your oven to the lowest setting, about 175 F, and layering the cooked waffles on a serving plate. The plate will be warm ( use oven mitts!) and the waffles will stay soft and fluffy

Strawberry Sauce
Served warm on top of waffles, french toast or pancakes, this sauce is the bomb.

Ingredients
  1. 1/2 cup water
  2. 1/2 cup sugar
  3. 1 1/2 cups sliced berries
Instructions
  1. Put water and sugar into a small pot, and bring to a gentle boil.
  2. Stir in slice or chopped strawberries, and bring to a boil again.
  3. Let boil gently for 10 minutes, and remove from heat.
  4. Serve warm

  1. These look delicious! I am definitely going to be trying your recipe. I often make waffles for my family, but from a mix! I have been meaning to try a waffle recipe from scratch and scrap the mix. The would love the strawberry sauce.
