You know what I love best about Easter?  White chocolate bunnies.  Don’t get me wrong, I love pretty much all things chocolate, I really do. But white chocolate bunnies, at Easter, now there’s something.

Tea Party Banana and White Chocolate Mini Muffin Recipe for Easter, Mother's Day, and Spring celebrations

Easter as we traditionally celebrate it, is just so pleasant.  It’s sort of like the song ‘My Favourite Things’, everything about how we celebrate Easter today is just ooozing with pleasantness.  Tea parties, brunch, fancy sides, desserts, and all those pastels!

And Spring!  And cute bunnies!  I could go on apparently, but I’m going to use a little self control and get to the point.

Tea Party Banana and White Chocolate Mini Muffins

So I have taken all that white chocolate yummy-ness, and and made these adorable Tea Party Banana and White Chocolate Mini Muffins.  Ideal for Easter, Mother’s Day, and Spring celebrations, and the best go to after school snack in our house for a while now.  And how could I forget, tea parties.  

Mini Muffin Recipe

You’ll need some of these mini muffin pansMini Muffin Paper Cups and I find using this 1/2 oz portion scoop for scooping the batter into the muffin tins make quick work of the process. 
 
 

 

Tea Party Banana and White Chocolate Mini Muffins
Healthy Banana Mini Muffin made special with white chocolate chips

Ingredients
  1. 1 cup flour
  2. 2 tsp. baking powder
  3. 1/2 tsp. salt
  4. 1/2 cup sugar
  5. 1/2 cup milk
  6. 1/4 cup melted butter
  7. 1 egg
  8. 3 bananas
  9. 1 cup white chocolate chips
Instructions
  1. Preheat oven to 375 F
  2. Line mini muffin tins with mini muffin papers
  3. Mix dry ingredients
  4. Stir melted butter into milk
  5. Mash bananas thouroughly
  6. Add milk mixture, egg and bananas to flour mixture and mix well
  7. Stir in white chocolate chips
  8. Scoop into prepared mini muffin tins, and bake for about 20 minutes.

I have to say that these mini muffins turned out even better than I expected.  I mean, I expected them to be good, but EVERYONE here loves them.  And that’s sayin’ something.   Call you grandmothers, invite them over for a tea party, make a batch of these delectable treats, and celebrate all that is right with the world.
