Applesauce is not only one of the easiest snacks to make yourself from scratch, it is also one of the cheapest.  It’s super easy because you only need two ingredients, and I’ve got a ratio I’m going to tell you about so making homemade applesauce will quickly become second nature to you. First though, let’s talk about the cheap and eco-friendly part.

Budget & World Friendly  

Making homemade applesauce is easy on your wallet. Making any foods yourself is usually cheaper on account of the packaging you’re not paying for ( I am really really not good at packaging – you can totally tell who has opened the cereal box in our house ) plus you’re using up ingredients  you already have.  Which leads me to next great thing about homemade applesauce. Food waste in Canada and the US is at a ridiculous rate of like 40% .  I think we can all think of a time when we bought a whole lot of food, namely fresh fruits and veggies, only to toss them out a few days later.  I’ve done it, you likely have too.  Instead of condemning ourselves as bad citizens – go check out your crisper drawer in your fridge, and collect all of the fruit that maybe isn’t going to be quite so amazing if you bit into it straight away.  Chances are you have some apples in there, that are maybe a wee bit bruised… or are just not at their prime.  Don’t throw them out, they are perfect for applesauce.

Remember, I said I was going to share with you a handy little ratio.  One thing to remember, and ta-da! You’re all making homemade applesauce and looking to customize.  This recipe is so incredibly easy, I’m not even going to make a printable card for it – all you need is this one ratio.  Feel free to bookmark the page of course, but I have confidence, you won’t need to.

All you need to remember in order to make homemade applesauce is that for every apple you use, you want to also use 1 tbsp. of water. 

Materials:

  1. Peel and core apples
  2. Cut apples into chunks and put in a saucepan, add 1 tbsp. water for every apple you use
  3. Cover with a lid and bring gently to a boil, checking often.
  4. When apple pieces can easily be pierced with a fork, mash them.
  5. Serve warm, or cool, and garnish or customize with your favourite add ins ( see some ideas below)

  • add 1/4 tsp sugar for every apple for a sweetened applesauce

Whether you are going to grow your own ingredients for this, or grab them from your local supermarket or grocery store, this salad really is the perfect summer salad.  The strawberries provide a wonderful texture, the baby spinach leaves are incredibly tasty, and if fresh, quite crisp – and the orange or mandarin segments add not only a sweet flavour, but also the dressing.

Ingredients
  1. 4 cups baby spinach leaves
  2. 2 cups strawberries
  3. 1 cup orange segments or a small can of mandarin slices
Instructions
  1. rinse spinach really well by submerging in water, swishing alot, and rinse under cold running water. Dry the leaves in a salad spinner if you have one, otherwise, let sit in a collander while you prepare the berries
  2. Either hull or slice of the very top of the berries, rinse well in cold water, and cut into chunks
  3. Peel the orange segments to that there is no peel or pith remaining. If using canned mandarin slices, drain off the liquid.
  4. Add all of the washed and drained ingredients to a salad bowl, stir and serve.

A coleslaw by any other name…Wait.  You probably think I’m making to much out of this.  It’s coleslaw.  Once you’ve had one, you’ve had them all, right?  Or more like, once you’ve had one that was terrible you’ve never ever tried it again.  Ever.  Am I right?

A Dime a Dozen

There are two basic ways to make coleslaw, and everything else is a variation of either of those ways.  First you have the ‘pickle-y coleslaw’.  This refers to the cabbage and other veggies, mixed in a salt / vinegar dressing.  Next is the ‘creamy coleslaw’ which is the same as the pickle-y version, only with mayonnaise added to the dressing.

Ingredients
  1. 1/2 head cabbage ( or 1/4 head red cabbage, and 1/4 head green cabbage)
  2. 1 carrot
  3. 1 onion
  4. 1.5 cups mayonnaise
  5. 6 tbsp. apple cider vinegar
  6. 2 tbsp. sugar
  7. 1 tsp. pepper
  8. 1/2 tsp. celery salt
Instructions
  1. You can process all of the veggies through your shredding disc on your food processor. I like to use a knife to cut the cabbage into long strips. It makes a nicer texture, and looks pretty
  2. Mix shredded veggies together in large mixing bowl.
  3. Mix remaining ingredients together in a small mixing bowl, and mix very well.
  4. Stir the dressing into the cabbage mixture, and continue to mix until well distributed.
  5. Cover and refrigerate until ready to serve

Breakfast is a pretty big deal.  It’s the most important meal of the day!  And we love the breakfasty foods.  The large spreads with fresh fruit, whipped cream, pastries, yogurts, bacon, sausages… oh yeah.  All that great stuff.

But as much as we love the stuff, nobody seems quite too keen on waiting around for it.  So froot loops it is.

However, since we do all love those foods, we do often have breakfast for lunch and or supper.  And everyone is happy, and I call that a win.  We made our Rudolph Pancakes for supper a few times leading up to Christmas, and we go out of our way to find the breakfast all day restaurants when we travel.

Ingredients
  1. 2 eggs, separated
  2. 2 cups milk
  3. 2 cups flour
  4. 1 tbsp baking powder
  5. 1/2 tsp salt
  6. 1/3 cup oil
Instructions
  1. Separate the eggs. Put the yolks in a mixing bowl, and put the whites in a separate bowl. Use a hand blender to beat the egg whites until they form peaks.
  2. Add the milk, flour, baking powder, salt and oil to the egg yolks and mix well.
  3. Fold in the beaten egg whites
  4. Use 1/3 cup of batter at a time per waffle in your waffle iron, and follow the directions on your waffle iron accordingly
Notes
  1. Keep your waffles warm by heating your oven to the lowest setting, about 175 F, and layering the cooked waffles on a serving plate. The plate will be warm ( use oven mitts!) and the waffles will stay soft and fluffy

  1. Put water and sugar into a small pot, and bring to a gentle boil.
  2. Stir in slice or chopped strawberries, and bring to a boil again.

Ultimate Egg Salad

What is your favourite type of sandwich?  Mine is hands down without a doubt tuna salad.  I have an issue however with purchasing tuna that was caught clear on the other side of the world, and sent over in a can.  But that’s another topic for another day, and so I’m going to share with you my second favourite, Egg Salad.

But it wasn’t always this way.  It took the discovery of a secret ingredient to make this luncheon staple even appear on the list.  Hard cooked eggs have a tendency to smell unpleasant.  Of course, there is a solution to that, and it’s knowing how to cook them properly.  And a lot of egg salads I have come across in the past have been yellowy goop.

A couple of things about making egg salad.  You really need to follow the instructions for perfectly hard boiled eggs.  It matters.  A perfectly cooked egg will not smell, and it will also have the optimum texture for chopping and not mashing.  It’s the chopped eggs that keep your salad from becoming goopy.  And of course not using too much mayonnaise.  And of course, there’s the secret ingredient.

Can you guess what the secret ingredient is?  Yep.  The photo gives it away.  Lime.  The lime juice in the egg salad is quite refreshing.  Squeeze a fresh lime if you’ve got one, and if not – bottled lime juice will work just as well.  However, lime peels in your compost will smell fantastic!

Let’s just get this out in the open straight away – I am not a fan of avocados.  But guacamole with just the right amount of zing, is an entirely different story.

See, the problem with avocados is first of all, I can’t spell it.  I just typed that word three times to get it right.  Gah. Anyway, the next problem I have with avocados ( got it right the first time there) is that they have no taste.  None. That is until you throw a jalapeno in the mix!

And by the time you throw in a jalapeno, some lime juice and a wee bit of onion, well you had better call your friends over and throw a party.  Reversely you could grab a bag of nachos and a book and keep it all to yourself.  Just sayin’

Ingredients
  1. 4 avocados
  2. 3 limes, juiced
  3. 1 tsp. salt
  4. 1-3 jalapeno peppers
  5. approx 1 tbsp onion, minced
Instructions
  1. Pit avocados and scoop out the flesh. Set aside the flesh from one, and chop it. Mash the remaining avocados.
  2. Add the chopped avocado to the mashed avocado, and mix in the lime juice, salt and minced onion.
  3. Using kitchen gloves, remove the seeds from the jalapeno pepper(s). Finely chop the peppers and add them to the avocado mixture. Mix well, and refrigerate

Cranberries, Sauced.

Let’s say that you’ve been invited to a Thanksgiving dinner.  Obviously you offer to bring something, wine or bread perhaps?  Maybe you suggest a quick stop at the bakery to grab a dessert?  What if your host says “No, no we’ve got all that covered thanks – perhaps you can bring a side dish?”
Now, either cooking is easy for you or it’s not.  If the former is true, you’ll have no trouble whatsoever preparing the easiest side dish ever, and not to mention, yummy!  If dabbling in the kitchen is not your forte, you may be inclined to skip that dinner altogether and cozy up with a t.v dinner – or search desperately for something in a can to bring along.  

Stop. Right. There.

Even if the thought of slaving in the kitchen causes you to buckle at the knees, this is still the easiest side dish ever to prepare.
Before I go any further, let’s remember Buffy.  Yes, that Buffy.  In the eighth episode of Season 4, entitled Pangs, Buffy is trying to create a typical Thanksgiving celebration.  She has lost her mom, her first year at college isn’t going so well, and she just wants to her friends to gather round for a nice Thanksgiving Supper.  And Willow brings frozen peas. 
You and I both know that there is nothing wrong with frozen peas, just like there is nothing wrong with cranberry sauce from a can.  However, some occasions call for fresh, and some occasions call for homemade. 
Let’s say that this Thanksgiving Dinner invite you received, is one of those occasions.

Whole Berry Cranberry Sauce

 

Ingredients

  • 1 1/2 cups whole cranberries
  • 1/2 cup sugar
  • 1/2 cup water

 

Seriously. That’s it.

Directions

1. Combing sugar and water in small pot / saucepan, and bring to a boil.
2. Add cranberries to boiling water, and bring to a boil again.
3. Reduce heat, and boil gently for 10 minutes, stirring occasionally.
4. Remove from heat, cool and transfer to a pretty bowl.

No Fail Mashed Potatoes

Seems easy, right? Mashed potatoes? Cook, mash, eat? Read on my friends, read on.
 

 
Seems easy, right?  Mashed potatoes?  Cook, mash, eat?  Read on my friends, read on.
No lumps, no bumps, no fail mashed potatoes.

 
Want to have mashed potatoes what are smooth, and tasty, without lumps?  No – you don’t have to whip them – there are two things you need to know to have no lumps, no bumps, no fail mashed potatoes.

No fail mashed potatoes tip #1

Select your potatoes, peel and chop them.  This is key point numero uno.  Don’t just throw the whole potato in the pot, and don’t just cut them in half either.  Chop them. Dice them.  Make the pieces small.  This accomplishes two things – shorter cooking time, and smaller pieces for mashing, hence a smoother texture.
No lumps, no bumps, no fail mashed potatoes.

 
Next, fill a pot with water, add the chopped potatoes, a dash or two of salt, and bring to a boil.
Turn down the heat so that you don’t  have spill overs, but keep the potatoes cooking in boiling water until they are soft.  Take a fork and try to spear the chopped potatoes – if you can do it easily, you’re ready.  They must be soft.

Mash them. A lot.  Use a potato masher, and mash them.  Add butter or margarine, your choice, I’m not judgy.  Add milk, as much as you wish, but try a little at a time, and mash them.    You can not overdo it.  You CAN underdo it, and that’s when you’ll get the lumpy bumpy potatoes. 
No lumps, no bumps, no fail mashed potatoes.

 
Stir in some garlic salt and onion powder, garnish with some chives, and you have yourself a bowl of the smoothest mashed potatoes in the world.

Ingredients

This fresh from the garden Baked Pumpkin has been served and enjoyed in our home as a side dish, main dish, breakfast and dessert! It is THAT good.

 
  • 1/3 cup softened butter / margarine
  • 3/4 cup sugar
  • 2 eggs
  • 5 oz. evaporated milk
  • 1 tsp. vanilla extract
  • 2 cups mashed / pureed pumpkin ( butternut squash makes an excellent substitute)
  • 1/2 cup crispy rice cereal
  • 1/4 cup brown sugar
  • 1/4 cup chopped pecans
  • 2 tbsp. melted butter / margarine

Directions

1. Preheat oven to 350 F
2. Lightly grease a deep baking / casserole dish
3. Cream butter and sugar.  Beat in eggs, milk and vanilla
4. Stir in pureed pumpkin.  The mixture will be very runny.
5. Pour into prepared baking dish, and bake uncovered for 45 minutes.

* Note that you can make ahead up to this point.  Refrigerate baked pumpkin up until 1 hour before you’d like to serve it.  Just add the topping and pop into warm oven for 20 minutes.
6. Mix together the remaining ingredients, and sprinkle over the top of the baked pumpkin.  Cook 5 – 10 minutes longer.
