Raspberry Muffins with Vanilla Sugar

Raspberry Muffins made with vanilla sugar perfect for breakfast and snacking.

Muffins are a staple, and when you make them with fresh ( or frozen !) fruit, they also become an excellent breakfast or snack.  These Raspberry Muffins made with vanilla sugar are no exception with a simple recipe for a small batch they quick to prepare and ready to enjoy!

Muffin Mania

It’s pretty hard to go wrong with a muffin.  From stick to your rib heartiness, to sweet chocolaty treats – muffins are pretty much where it’s at.  I like to experiment with the fruit we have on hand, and a cup of berries that are past their prime are going to go further in a small batch of muffins than on their own.

Use fresh picked, frozen, farmer’s market or grocery store purchased berries for these – whatever works for you.

Raspberry Muffins with Vanilla Sugar

Ingredients:

  • I cup flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup vanilla sugar
  • 1/2 cup milk
  • 1/4 cup melted butter
  • 1 egg
  • 1 cup raspeberries

Note: Make 1/2 cup vanilla sugar by mixing 1/2 cup granulated sugar with 1/2 tsp vanilla extract

Directions:

  • Preheat oven to 375 F
  • Mix flour, baking powder, salt and vanilla sugar and set aside.
  • In a separate bowl, mix milk, melted butter and egg.
  • Stir milk mixture into flour mixture and then gently stir in the raspberries
  • Line a muffin pan with muffin cups
  • Use a 1/4 cup Portion Scoop to fill muffin cups 
  • Bake for 15 to 20 minutes – until tops are browned.
  • Cool on wire wrack and enjoy!

Reasons to love Rhubarb

Rhubarb has a taste that is quite unique. It is perfect for muffins, breads and cakes, as it is not too sweet.  You will find that a lot of recipes using rhubarb also add strawberries.  They go quite well together!

Besides these amazing rhubarb recipes, Rhubarb is a hardy, perennial vegetable, that requires very little care and maintenance.  Try to cut it before it goes to seed, and don’t cut the really small pieces when you do harvest. 

Even in the Northern Ontario climates, you can get at least two, and often three harvests per year.  That is usually enough to stock a freezer. Rhubarb freezes well, it also cans well.  You can mix it with sugar and can it, and use it later on in crumbles, crisps and my favourite cobbler recipe.

Rhubarb Mini Muffins

Rhubarb is one of the easiest vegetables to grow ever.  It made my list of 7 Easy to grow Veggies, and I told you a little bit about caring for the plant during Rhubarb Season.

What I may not have mentioned yet, is that you can quite a lot of rhubarb from one plant, and with rhubarb a little goes a long way.  You can freeze rhubarb to keep it for baking through the winter, and you can also can it it many ways; as a syrup, a jam, and a sauce.  

These tasty sweet little muffins are a favourite here, and the the crumbly sugary top is tasty enough for a light dessert, and satisfying enough for a great snack.  They are also wonderful with coffee at breakfast.  And you’re wondering about that problem I mentioned earlier?  Well, I eat them like potato chips.

Ingredients
  1. 2 Cups Flour
  2. 3/4 Cups Sugar
  3. 2 1/2 tsp. Baking Powder
  4. 1 tsp. Cinnamon
  5. 1/2 tsp. Baking Soda
  6. 1/2 tsp. Salt
  7. 1 Cup Sour Cream
  8. 1/2 Cup Melted Butter
  9. 2 Eggs
  10. 1 tsp. Vanilla Extract
  11. 2 Cups Chopped Rhubarb
  12. 3 tbsp. Cinnamon Sugar Topping
Instructions
  1. Preheat oven to 400 F
  2. Line Mini Muffin Pan with paper cups
  3. Mix dry ingredients, set aside
  4. Mix in all remaining ingredients, save the rhubarb and topping
  5. Stir in the rhubarb
  6. Fill mini muffin cups and sprinkle topping generously on muffins
  7. Bake for 15-20 minutes or until done

  1. Make cinnamon sugar by mixing 1/2 cup sugar with 2 tbsp. on ground cinnamon - too easy!

Homemade Apple Sauce Recipe for a quick and easy and healthy totally doable snack

Applesauce is not only one of the easiest snacks to make yourself from scratch, it is also one of the cheapest.  It’s super easy because you only need two ingredients, and I’ve got a ratio I’m going to tell you about so making homemade applesauce will quickly become second nature to you. First though, let’s talk about the cheap and eco-friendly part.

Budget & World Friendly  

Making homemade applesauce is easy on your wallet. Making any foods yourself is usually cheaper on account of the packaging you’re not paying for ( I am really really not good at packaging – you can totally tell who has opened the cereal box in our house ) plus you’re using up ingredients  you already have.  Which leads me to next great thing about homemade applesauce. Food waste in Canada and the US is at a ridiculous rate of like 40% .  I think we can all think of a time when we bought a whole lot of food, namely fresh fruits and veggies, only to toss them out a few days later.  I’ve done it, you likely have too.  Instead of condemning ourselves as bad citizens – go check out your crisper drawer in your fridge, and collect all of the fruit that maybe isn’t going to be quite so amazing if you bit into it straight away.  Chances are you have some apples in there, that are maybe a wee bit bruised… or are just not at their prime.  Don’t throw them out, they are perfect for applesauce.  

Easy Homemade Applesauce

Remember, I said I was going to share with you a handy little ratio.  One thing to remember, and ta-da! You’re all making homemade applesauce and looking to customize.  This recipe is so incredibly easy, I’m not even going to make a printable card for it – all you need is this one ratio.  Feel free to bookmark the page of course, but I have confidence, you won’t need to.

All you need to remember in order to make homemade applesauce is that for every apple you use, you want to also use 1 tbsp. of water. 

Materials:

Directions:

  1. Peel and core apples
  2. Cut apples into chunks and put in a saucepan, add 1 tbsp. water for every apple you use
  3. Cover with a lid and bring gently to a boil, checking often.
  4. When apple pieces can easily be pierced with a fork, mash them.
  5. Serve warm, or cool, and garnish or customize with your favourite add ins ( see some ideas below)

  • add 1/4 tsp sugar for every apple for a sweetened applesauce

Whether you are going to grow your own ingredients for this, or grab them from your local supermarket or grocery store, this salad really is the perfect summer salad.  The strawberries provide a wonderful texture, the baby spinach leaves are incredibly tasty, and if fresh, quite crisp – and the orange or mandarin segments add not only a sweet flavour, but also the dressing.

Ingredients
  1. 4 cups baby spinach leaves
  2. 2 cups strawberries
  3. 1 cup orange segments or a small can of mandarin slices
Instructions
  1. rinse spinach really well by submerging in water, swishing alot, and rinse under cold running water. Dry the leaves in a salad spinner if you have one, otherwise, let sit in a collander while you prepare the berries
  2. Either hull or slice of the very top of the berries, rinse well in cold water, and cut into chunks
  3. Peel the orange segments to that there is no peel or pith remaining. If using canned mandarin slices, drain off the liquid.
  4. Add all of the washed and drained ingredients to a salad bowl, stir and serve.

A super easy soda bread made with tasty dried cranberries - perfect for St. Patrick's Day celebrations!

Ingredients
  1. 3 3/4 cups flour
  2. 1/4 cup brown sugar
  3. 1 tbsp. baking powder
  4. 1 tsp. baking soda
  5. 1/2 tsp. salt
  6. 2 cups buttermilk
  7. 1 egg
  8. 1 cup dried cranberries
Instructions
  1. Preheat oven to 375 F
  2. In large bowl mix flour, sugar, powder, salt, and soda.
  3. In separate bowl, mix milk with eggs.
  4. Stir the milk mixture into the flour mixture. The dough will be quite soft.
  5. Fold in cranberries.
  6. On lightly floured surface, turn dough out, and knead - but not too much. Eight times should do it.
  7. Shape into a round loaf, cut an 'X' on the top center, place on baking sheet lined with parchment paper, and bake 45 to 50 minutes.
Notes
  1. Make 2 cups of lemon juice by using two tbsp. lemon juice and add milk to equal 2 cups

Waffles and Strawberry Sauce

Homemade Waffles with a delightful strawberry sauce - not just for breakfast

Breakfast is a pretty big deal.  It’s the most important meal of the day!  And we love the breakfasty foods.  The large spreads with fresh fruit, whipped cream, pastries, yogurts, bacon, sausages… oh yeah.  All that great stuff.

But as much as we love the stuff, nobody seems quite too keen on waiting around for it.  So froot loops it is.

However, since we do all love those foods, we do often have breakfast for lunch and or supper.  And everyone is happy, and I call that a win.  We made our Rudolph Pancakes for supper a few times leading up to Christmas, and we go out of our way to find the breakfast all day restaurants when we travel.

Homemade Waffles
A really easy homemade waffle that is light and fluffy

Ingredients
  1. 2 eggs, separated
  2. 2 cups milk
  3. 2 cups flour
  4. 1 tbsp baking powder
  5. 1/2 tsp salt
  6. 1/3 cup oil
Instructions
  1. Separate the eggs. Put the yolks in a mixing bowl, and put the whites in a separate bowl. Use a hand blender to beat the egg whites until they form peaks.
  2. Add the milk, flour, baking powder, salt and oil to the egg yolks and mix well.
  3. Fold in the beaten egg whites
  4. Use 1/3 cup of batter at a time per waffle in your waffle iron, and follow the directions on your waffle iron accordingly
Notes
  1. Keep your waffles warm by heating your oven to the lowest setting, about 175 F, and layering the cooked waffles on a serving plate. The plate will be warm ( use oven mitts!) and the waffles will stay soft and fluffy

  1. 1/2 cup water
  2. 1/2 cup sugar
  3. 1 1/2 cups sliced berries
Instructions
  1. Put water and sugar into a small pot, and bring to a gentle boil.
  2. Stir in slice or chopped strawberries, and bring to a boil again.
  3. Let boil gently for 10 minutes, and remove from heat.
  4. Serve warm

Rudolph the Red Nosed… Pancakes?

If someone ever says to you, can you make pancakes that look like Rudolph, you will truly be able to say “yes.  Yes I can” And how cool would that be?

While we may not decorate for Christmas until well into the second or even third week of December – we do still crank out the Christmas tunes, and use every opportunity to turn something ordinary, into something Christmassy!
And you may gasp at the third week of December part.  Well, we’re a one holiday at a time kind of family, and we don’t gear up for Christmas until after St. Nicholas Day has come and gone.  A lot of the St. Nicholas decorations are also suitable for Christmas, but there is a clear distinction of the two.  See our Gingerbread House for dessert on St. Nicholas Day here.
 
But when my Son says “Mom, can you make pancakes that look like Rudolph for supper?” I say “heck ya!”

Whip out the Christmas Tunes, and prepare to indulge your tummies and your holiday spirit!

Ingredients

  • Pancake batter (see recipe below)
  • Breakfast sausages or bacon
  • Whipped cream
  • Chocolate chips
  • Chocolate spread or peanut butter
  • Maraschino cherries

Pancake Batter Recipe

  • 1 1/2 cups flour
  • 1 tsp. salt
  • 3 tbsp. sugar
  • 1 3/4 tsp. baking powder
  • 2 eggs
  • 3 tbsp. melted butter
  • 1 1/4 cups milk

Directions

1. Prepare the pancake batter : Mix dry ingredients.  Add melted butter to milk.  Add milk mixture to flour mixture.  Add eggs.  Mix just until not lumpy.
2. Prepare breakfast sausages or bacon
3. Fry your pancake batter in batches.  One larger diameter pancake per Rudolph and one smaller diameter pancake per Rudolph
4. Assemble as shown below.

Ingredients

This fresh from the garden Baked Pumpkin has been served and enjoyed in our home as a side dish, main dish, breakfast and dessert! It is THAT good.

 
  • 1/3 cup softened butter / margarine
  • 3/4 cup sugar
  • 2 eggs
  • 5 oz. evaporated milk
  • 1 tsp. vanilla extract
  • 2 cups mashed / pureed pumpkin ( butternut squash makes an excellent substitute)
  • 1/2 cup crispy rice cereal
  • 1/4 cup brown sugar
  • 1/4 cup chopped pecans
  • 2 tbsp. melted butter / margarine

Directions

1. Preheat oven to 350 F
2. Lightly grease a deep baking / casserole dish
3. Cream butter and sugar.  Beat in eggs, milk and vanilla
4. Stir in pureed pumpkin.  The mixture will be very runny.
5. Pour into prepared baking dish, and bake uncovered for 45 minutes.

* Note that you can make ahead up to this point.  Refrigerate baked pumpkin up until 1 hour before you’d like to serve it.  Just add the topping and pop into warm oven for 20 minutes.
6. Mix together the remaining ingredients, and sprinkle over the top of the baked pumpkin.  Cook 5 – 10 minutes longer.

The Bliss of Berry Picking

What, with all the mosquitoes, blackflies and sunburns?  Is there anything more fun than berry picking?  Well, actually, yes.  There are lots of things way more fun than berry picking.  But berry picking does have it’s high points.  Like, getting outside, which is always a plus.  Also, a little adventure, a little exercise.  It’s a great activity for little Helpers too – talk about working both fine and gross motor skills!  And I mean really, how can you go wrong when you teach children at a very young age how to scavenge for food?  Plus, berries.  

Sometimes Applesauce Needs A Bit More than Apples

But this isn’t really about berry picking.  This is about applesauce.   If you can make it with fresh berries that you picked yourself that is extra super duper awesome.  If, you don’t have fresh berries, frozen will work too.  We are very fortunate in that we have blueberry bushes scattered throughout our property, and the roads out our way are lined with raspberry bushes. All we’re missing are apple trees.  One day my friends, one day.

Sometimes Applesauce Needs A Bit More than Apples. Berries, it needs berries. But not mushed up berries.

Ingredients
  1. two apples
  2. 2 tbsp water
  3. 1/4 tsp cinnamon
  4. 1 tbsp brown sugar
  5. 1 cup blueberries
  6. 1 cup raspberries
Instructions
  1. Peel, core and chop apples
  2. Place apples in a saucepan with water, and cook until soft enough to mash (approx 10 minutes) stir often
  3. Remove apples from heat, stir in cinnamon and sugar, set aside.
  4. Mix berries together in a separate bowl.
  5. Spoon applesauce into serving bowls, and top with a serving of the mixed berries.
