Adding Zucchini To Your Recipes

Zucchini usually grows in abundance in your garden, no matter your gardening skills or experience.  One zucchini plant can often result in many many fruit, and when it comes to zucchini, a little goes a long way.  And it is so versatile!

Zucchini can be turned into noodles, sliced and baked in the oven with some of your favourite seasonings, quartered and stuffed, and shredded and added to your favourite cake / cookie / muffin recipes.  It keeps for a while in the fridge, and also freezed well – just shred it first!

Cranberry Freckle Bread

Cranberry 'Freckles' sweeten up this super easy soda bread and it's perfect for snacking, and just as special with a cup of coffee.

It truly doesn’t get much better than this.  A super easy soda bread garnished with dried cranberries, and we’re on our way to a terrific week.

Easy to make and a super healthy snack, with a fun name.  What more could you ask for?

A super easy soda bread made with tasty dried cranberries - perfect for St. Patrick's Day celebrations!

Ingredients
  1. 3 3/4 cups flour
  2. 1/4 cup brown sugar
  3. 1 tbsp. baking powder
  4. 1 tsp. baking soda
  5. 1/2 tsp. salt
  6. 2 cups buttermilk
  7. 1 egg
  8. 1 cup dried cranberries
Instructions
  1. Preheat oven to 375 F
  2. In large bowl mix flour, sugar, powder, salt, and soda.
  3. In separate bowl, mix milk with eggs.
  4. Stir the milk mixture into the flour mixture. The dough will be quite soft.
  5. Fold in cranberries.
  6. On lightly floured surface, turn dough out, and knead - but not too much. Eight times should do it.
  7. Shape into a round loaf, cut an 'X' on the top center, place on baking sheet lined with parchment paper, and bake 45 to 50 minutes.

  1. Make 2 cups of lemon juice by using two tbsp. lemon juice and add milk to equal 2 cups

Ultimate Egg Salad

the Ultimage Egg Salad Sandwich

What is your favourite type of sandwich?  Mine is hands down without a doubt tuna salad.  I have an issue however with purchasing tuna that was caught clear on the other side of the world, and sent over in a can.  But that’s another topic for another day, and so I’m going to share with you my second favourite, Egg Salad.

But it wasn’t always this way.  It took the discovery of a secret ingredient to make this luncheon staple even appear on the list.  Hard cooked eggs have a tendency to smell unpleasant.  Of course, there is a solution to that, and it’s knowing how to cook them properly.  And a lot of egg salads I have come across in the past have been yellowy goop.

A couple of things about making egg salad.  You really need to follow the instructions for perfectly hard boiled eggs.  It matters.  A perfectly cooked egg will not smell, and it will also have the optimum texture for chopping and not mashing.  It’s the chopped eggs that keep your salad from becoming goopy.  And of course not using too much mayonnaise.  And of course, there’s the secret ingredient.

Can you guess what the secret ingredient is?  Yep.  The photo gives it away.  Lime.  The lime juice in the egg salad is quite refreshing.  Squeeze a fresh lime if you’ve got one, and if not – bottled lime juice will work just as well.  However, lime peels in your compost will smell fantastic!

Ingredients
  1. four hardboiled eggs
  2. 1/4 cup finely chopped celery
  3. 1/4 cup finely chopped onion
  4. 2 tsp. dijon mustard
  5. 2 1/2 tsp lime juice
  6. 1/4 cup mayo
Instructions
  1. Peel and chop the hard boiled eggs.
  2. Stir in the remaining ingredients.
  3. Refrigerate until ready to serve.
  4. Spread desired amount on bread of your choice
